One Grocery List, Five Different Weeknight Dinners

5. Dinner five: roast potatoes, cabbage and warm white beans

Heat the oven to 425°F. Cut the remaining two potatoes into small wedges and some cabbage into thicker wedges. Coat lightly with oil, place on a tray with room between pieces and roast until the potatoes are cooked through and the cabbage is tender, turning as needed.

If one vegetable finishes first, remove it while the other continues. Warm the final drained can of white beans with a little garlic, water and oregano in a saucepan. Spoon into bowls with the roasted vegetables and finish with pepper or a topping you enjoy.

This dinner uses a different cooking method from the stews and pasta even though the ingredients overlap. Don’t roast questionable produce just to finish the list; food condition and safe storage still come first. Any remaining fresh cabbage can become another meal beyond this five-dinner plan. Keep a note of the portions that worked for you so the next list is easier to adjust.

Use one grocery list to plan the next week

Before you repeat the plan, note which meal was too small, which ingredient was left over and which dinner you actually looked forward to. Adjust the quantities accordingly. Freeze suitable extra portions promptly rather than expecting every cooked dish to last the whole week in the refrigerator. Store cooked food safely

Keep the refrigerator at 40°F or below. Refrigerate perishables promptly, use cooked leftovers within 3–4 days and reheat leftovers to 165°F. Follow USDA’s full guidance, including the shorter room-temperature limit in hot conditions.
